Lemon Pepper Barramundi over a Mediterranean Salad


Ingredients:

  • 4oz skinless fillet
  • 1 pita
  • 4cups of spring mix
  • 45g Cilantro Avocado Yogurt Dressing
  • 198g tomato
  • 1/4 medium red onion
Instructions:

  1. Preheat stovetop pan to low heat.
  2. Season fillet with lemon pepper seasoning.
  3. Cook fillet on low fully covered till cooked through.
  4. Prep bowl with remaining ingredients.
  5. Top the bowl with the fillet.
  6. Enjoy!!
