Ingredients
1 Tbsp butter
2 eggs, scrambled
3 Tbsps soy sauce
2 Tbsps oyster sauce
1 Tbsp mirin
1 tsp sesame oil
Oil for cooking
1 chicken breast, diced
1 cup carrots, diced
1 small yellow onion, diced
Chili powder, 1 pinch
4 garlic cloves, minced
1 cup frozen peas
1 lb riced cauliflower
2 stalks green onion, chopped
Directions
- Preheat a small pan and add butter. Let it melt and scramble 2 eggs with a pinch of salt and set aside.
- Combine soy sauce, oyster sauce, mirin, and sesame oil in a small bowl and set aside.
- Preheat a large pan, add a splash of cooking oil and chicken. Cook chicken until golden brown on all sides. Transfer to a bowl and set aside.
- Splash another bit of oil in the same pan, add carrots, onions, and season with some salt and pepper. Cook for about 5 minutes, stirring occasionally.
- Add a pinch of chili flakes, and garlic. Cook for another minute.
- Add peas and riced cauliflower and cook for 2 more minutes. Make sure everything is mixed well.
- Add the chicken, eggs and soy sauce mixture. Mix and cook another 2 minutes, stirring constantly.
- Remove from heat, and mix in the green onions.
- Plate and serve.
