Cauliflower Fried Rice

Ingredients

  • 1 Tbsp butter
  • 2 eggs, scrambled
  • 3 Tbsps soy sauce
  • 2 Tbsps oyster sauce
  • 1 Tbsp mirin
  • 1 tsp sesame oil
  • Oil for cooking
  • 1 chicken breast, diced
  • 1 cup carrots, diced
  • 1 small yellow onion, diced
  • Chili powder, 1 pinch
  • 4 garlic cloves, minced
  • 1 cup frozen peas
  • 1 lb riced cauliflower
  • 2 stalks green onion, chopped

Instructions

  • Preheat a small pan and add butter. Let it melt and scramble 2 eggs with a pinch of salt and set aside.
  • Combine soy sauce, oyster sauce, mirin, and sesame oil in a small bowl and set aside.
  • Preheat a large pan, add a splash of cooking oil and chicken. Cook chicken until golden brown on all sides. Transfer to a bowl and set aside.
  • Splash another bit of oil in the same pan, add carrots, onions, and season with some salt and pepper. Cook for about 5 minutes, stirring occasionally.
  • Add a pinch of chili flakes, and garlic. Cook for another minute.
  • Add peas and riced cauliflower and cook for 2 more minutes. Make sure everything is mixed well.
  • Add the chicken, eggs and soy sauce mixture. Mix and cook another 2 minutes, stirring constantly.
  • Remove from heat, and mix in the green onions.
  • Plate and serve.
