Greek Lemon Potatoes

Greek Lemon Potatoes


Ingredients:

  • 6-7 medium-sized potatoes
  • 1/2 cup olive oil
  • 1/3 cup lemon juice
  • 1.5 cups chicken broth
  • 1 tbsp oregano
  • 1/2 tsp salt
  • 1 tbsp semolina
  • Optional Garnish: Lemon slices and fresh parsley
Instructions:

  1. Mix together oil, lemon juice, broth LC oregano, salt and semolina.
  2. Cut potatoes into wedges.
  3. Lay potatoes in a baking dish and cover with marinade. Cover the dish with foil and bake at 400° for 40 minutes. Remove foil and mix. Bake for another 30 minutes or until 2/3 of the juice has evaporated! Top with parsley and fresh lemon for garnish.
