Greek Lemon Potatoes Recipe

Ingredients
- 6-7 medium-sized potatoes
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 1.5 cups chicken broth
- 1 tbsp oregano
- 1/2 tsp salt
- 1 tbsp semolina
- Optional Garnish: Lemon slices and fresh parsley
Instructions
- Mix together oil, lemon juice, broth LC oregano, salt and semolina.
- Cut potatoes into wedges.
- Lay potatoes in a baking dish and cover with marinade. Cover the dish with foil and bake at 400° for 40 minutes. Remove foil and mix. Bake for another 30 minutes or until 2/3 of the juice has evaporated! Top with parsley and fresh lemon for garnish.
