Mix together oil, lemon juice, broth LC oregano, salt and semolina.
Cut potatoes into wedges.
Lay potatoes in a baking dish and cover with marinade. Cover the dish with foil and bake at 400° for 40 minutes. Remove foil and mix. Bake for another 30 minutes or until 2/3 of the juice has evaporated! Top with parsley and fresh lemon for garnish.
