Bulgur Salad With Roasted Vegetables Recipe

Ingredients
- 150g bulgur or couscous
- 50g raisins
- 10g mint
- 10g parsley or coriander
- 2 spring onions
- Juice of 1 lemon
- 2 tbsp olive oil
- 50g green olives, sliced
- 100g feta
- 30g almond flakes, roasted
Instructions
- Bring the bulgur to a boil in a pot with 1 liter of water.
- Cook for about 15 minutes. Meanwhile, soak the raisins for 15 minutes in lukewarm water.
- Roast the almonds.
- Add the bulgur to a bowl together with the chopped parsley, mint, olives, spring onions, feta, almonds, lemon juice, olive oil, salt and pepper.
