- 1 pound English prawns, peeled and deveined
- 2 romaine lettuce hearts, washed and torn into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/2 cup croutons
For the Dressing:
- 1/4 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 clove garlic, minced
- Salt and pepper to taste
- Heat some oil in a large skillet over medium-high heat. Cook for 3-4 minutes, or until the prawns turn pink and opaque. Set aside after removing from the heat.
- In a large bowl, combine the romaine lettuce, cherry tomatoes, Parmesan cheese, and croutons.
