Sweet Potato, Ginger and Vegetable Coconut Curry Recipe

Cooked with 1 whole sweet potato and basically every vegetable I could find in the fridge!
I boiled the sweet potato in shallow water before adding 3 cloves of garlic, a generous amount of freshly diced ginger, paprika, turmeric, peppers, beans and 1 thinly sliced carrot, 4 x Kaffir lime leaves, 1 can of coconut milk, a sprinkle of chili, vegetable stock and seasoning.
I left on a low heat until heated through and then sprinkled some toasted sesame seeds, black pepper and smoked paprika to serve. If you’re looking for a low carb, seriously quick and yummy meal, you should give this a go!
