Chicken Schezwan/Szechuan
Ingredients
- 500g chicken breast
- 5 tbsp cornflour
- Red chilli powder
- 1 tbsp soya sauce
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 cup ketchup
- 1 1/4 cup water
- 5 tbsp soya sauce
- 1 tbsp vinegar
- 1-2 tbsp red chilli sauce(optional)
- 1/2 tsp white pepper powder
- 1 tbsp sugar
- 4 tbsp oil
- 6 cloves garlic minced/very finely chopped
- 1/4-1/2 tsp dry red chilli flakes
- 1 large capsicum large pieces/strips
- 1 large carrot large pieces/strips
- 1 large white onion large pieces/strips
- Green onion chopped- whites and greens separated.
- 1 tbsp cornflour mixed with 1/4 cup water
Instructions
- In a bowl, mix all these ingredients and coat chicken well. Heat oil and deep fry the chicken pieces just until lightly golden.
- Remove and keep aside.
- In a bowl, mix all sauce ingredients and set aside.
- Heat oil, add in garlic, chilli flakes, green onion whites and fry on low for 1–2 minutes. Add in the sauce, mix well and let bubble for 2 minutes.
- Add in the fried chicken along with the vegetables. Mix well until everything is coated well with the sauce. Add the cornflour slurry. Let cook for 8-10 minutes until vegetables are a bit softened. Adjust the gravy consistency by adding more water if required. Add salt if required.
- Do coal smoke for street style desi Chinese flavour. Garnish with chopped green onion and serve with fried rice.
