Chicken Schezwan/Szechuan


  • 500g chicken breast
  • 5 tbsp cornflour
  • Red chilli powder
  • 1 tbsp soya sauce
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • In a bowl, mix all these ingredients and coat chicken well. Heat oil and deep fry the chicken pieces just until lightly golden.
  • Remove and keep aside.

  • 1 1/4 cup water
  • 1/4 cup ketchup
  • 5 tbsp soya sauce
  • 1 tbsp vinegar
  • 1-2 tbsp red chilli sauce(optional)
  • 1/2 tsp white pepper powder
  • 1 tbsp sugar
  • In a bowl, mix everything and set aside.

  • 4 tbsp oil
  • 6 cloves garlic minced/very finely chopped
  • 1/4-1/2 tsp dry red chilli flakes
  • 1 large capsicum large pieces/strips
  • 1 large carrot large pieces/strips
  • 1 large white onion large pieces/strips
  • Green onion chopped- whites and greens separated.
  • 1 tbsp cornflour mixed with 1/4 cup water

  1. Heat oil, add in garlic, chilli flakes, green onion whites and fry on low for 1–2 minutes. Add in the sauce, mix well and let bubble for 2 minutes.
  2. Add in the fried chicken along with the vegetables. Mix well until everything is coated well with the sauce. Add the cornflour slurry. Let cook for 8-10 minutes until vegetables are a bit softened. Adjust the gravy consistency by adding more water if required. Add salt if required.
  3. Do coal smoke for street style desi Chinese flavour. Garnish with chopped green onion and serve with fried rice.
