Ingredients
  

  • Red potatoes
  • Onions
  • 10 eggs
  • 1/3 cup milk
  • 1 cup shredded smoked cheddar
  • Salt
  • Pepper

Instructions
 

  • Set oven to 325.
  • Sauté chopped up red potatoes and onions.
  • While that’s cooking mix together 10 eggs, 1/3 cup milk, 1 cup shredded smoked cheddar, greens and salt, and pepper to taste.
  • Mix cooked potatoes with egg mix, pour about 1/3-1/2 cup into each muffin tin(the eggs will rise a little) and bake in the oven for 20-25 mins.
