Ingredients
1 tsp olive oil
1/3 cup onion, sliced
1 clove garlic, minced
2 cups mushrooms, sliced
1/2 cup cherry tomatoes, halved
3 tbsp sliced green olives
2 cups baby spinach
1 serving spaghetti
3 tbsp hummus
1 tbsp lemon juice
1/4 tsp red chili flakes
1/4 tsp dried parsley
Salt & pepper to taste
3 tbsp pasta water
Directions
- Fill a pot with water and salt, bring to a boil and cook the pasta.
- Meanwhile, sauté the onions and garlic in olive oil until they begin to soften. Add the mushrooms and cook until they reduce to half, then add the olives and cherry tomatoes. Once the tomatoes start to burst, add the spinach.
- In a small bowl, combine the hummus, lemon juice, chili flakes, parsley, salt, pepper and pasta water to create the sauce. Add the pasta to the frying pan with the vegetables and pour the hummus mixture over the pasta. Stir well and serve with fresh parsley or basil and hemp seeds on top. ⠀⠀⠀⠀⠀⠀
