Plum Cobbler
Ingredients
- 7/8 medium-sized plums
- 1 tbsp light brown sugar
- 1 apple
- 3 tbsp cornflour
- 2 tsp cinnamon
- 120g plain flour
- 1tsp baking powder
- 30g sugar
- 100g cold lighter butter
- 150ml low-fat cream
Instructions
- Finely slice the plums, grate and peel the apple and combine with the brown sugar. Add the cornflour and cinnamon then place in the bottom of a cast-iron dish.
- Mix flour, baking powder, sugar and butter and combine until crumbly. Mix in the cream then drop spoonfuls onto the plum mix.
- Sprinkle with a little sugar and bake for 40 mins on 180C.
