No Bake Lotus Protein Cookie Bars


Ingredients:

  • 1 1/2 cups lotus spread
  • 1 2/3 cups crushed lotus biscuits
  • 1 cup icing sugar
  • 1 Tablespoon vanilla
  • 1/4 cup vegan spread (I used flora)
  • 1 1/2 cup chocolate chips
  • one scoop protein powder
  • 1 Tablespoon peanut butter
Instructions:

  1. Put all the ingredients excluding the chocolate chips and the tablespoon of peanut butter into a blender.
  2. Give it a blitz and add some milk if needed.
  3. Press this biscuit mixture into a tin.
  4. Melt the chocolate chips and peanut butter in the microwave and put on top of the biscuit base.
  5. Add some toppings and then put in the fridge to set
