Jelly donuts
Ingredients
- 1 cup warm water (110° F)
- 1 tablespoon of active dry yeast
- 3 cups of all-purpose flour
- 1/4 cup of confectioners’ sugar
- 3/4 teaspoon salt
- 2 large egg yolks
- 2 tablespoons of vegetable oil, plus 2 quarts for the heavy pot
- 1 teaspoon vanilla extract
- 1 or 2 cups of Ma-Mere’s Maison Strawberry Jelly
Instructions
- Mix the warm water and yeast in a bowl. Let it sit for about 5 minutes or until it bubbles.
- Add two egg yolks, 2 tablespoons of oil, and vanilla to the yeast mixture. Whisk until combined and set aside. In a large bowl combine the flour, salt, and confectioners’ sugar.
- Use a spatula to mix the dry and liquid mixtures together until it turns into dough. Cover the bowl with plastic wrap and let it rise for 1-2 hours.
- Place the dough on a clean countertop dusted heavily with flour. Sprinkle some flour on top of the dough and roll it out.
- Take a circle cookie cutter and cut out circles of dough.
- Add oil into a heavy pot and heat over medium heat until it reaches about 350°F.
- Place 6 pieces in the oil and fry until golden brown. Once they start to puff up, flip them.
- Once both sides are golden, pick them up and place them on a paper towel-lined baking sheet.
- Use a toothpick to puncture the side of each to form a pocket in the center.
- Place the tip of the piping bag into the pocket and squeeze 1 to 2 tablespoons of Ma-Mere’s Maison Strawberry Jelly inside.
- Cover the donuts with sugar and they are ready to serve!
