Lemon drizzle cake

Ingredients
- 225g butter, melted slightly
- 225g sugar
- 4 eggs
- 225g self-raising flour
- Zested of 1 lemon
Drizzle Topping:
- Juice of 1½ lemons
- 85g sugar
Instructions
- In a bowl, mix together the butter and sugar until fully combined.
- Add in the remaining cake ingredients and mix until you get a thick batter. Spoon the mixture into a loaf tin lined with greaseproof paper and bake in a bowl, mix together the butter and sugar until fully combined.
- Bake for 40-45 mins, or until risen and darkened slightly. once the cake is cooked, prick all over with a skewer or fork.
- Make the drizzle topping by mixing together the sugar and lemon juice.
- Pour over the warm cake and leave it to cool.
- Cut into thick slices and enjoy!
It was simple to make and tasted amazing.
