Peel pumpkin from skin and seeds, cut into small bars. Cut veal in the same pieces.
Heat the frying pan and fry the pumpkin in vegetable oil until half cooked. Add meat to the pumpkin, fry on medium heat, stirring for 3-4 minutes.
Chop garlic and add to pan, mix, add onion, chopped into thin half-rings, mix and cook for another 2–3 minutes.
Add chopped peppers and zucchini into the griddle and mix. Pepper, salt, add thyme, ground coriander and chopped cilantro. Serve sprinkled with fresh cilantro.
