Combine the mince, soy sauce and salt in a small bowl and mix well.
Heat a wok until it is hot. Add the oil and fry the mince. When the pork is crispy and dry, after about 5-6 minutes, remove it with a slotted spoon and drain on a plate lined with kitchen paper.
Carefully strain and reserve the oil.
Pour two tablespoons of the pork oil back into the wok over medium-high heat. Stir-fry the garlic and spring onions for 30 seconds. Add the sesame paste, soy sauce, chilli oil, salt and chicken stock and simmer for 4 minutes.
Cook the noodles in a large pan of salted boiling water with the broccoli.
Once cooked, remove from the pan and stir through the mince mixture.
Serve and top with the chilli.
