Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, whisk together the olive oil, harissa paste, honey, salt, and pepper.
Add the sliced carrots to the bowl and toss to coat well with the harissa mixture.
Arrange the coated carrots in a single layer on the prepared baking sheet.
Roast the carrots in the preheated oven for 20-25 minutes, until tender and caramelized around the edges.
Remove from the oven and let the carrots cool for a few minutes.
Transfer the roasted carrots to a serving dish and sprinkle with crumbled feta cheese and chopped mint leaves.
