Heat the vegetable oil in a large skillet over medium-high heat.
Add the chopped onions, green onions, garlic, and ginger. Cook until fragrant and onions are translucent.
Add the ground pork and cook until browned, breaking up any clumps with a spoon.
In a small bowl, whisk together the soy sauce, hoisin sauce, chili garlic sauce, rice vinegar, salt, and pepper.
Pour the sauce over the pork and stir to coat evenly.
Cook for an additional 2-3 minutes, until the sauce has thickened and the pork is fully cooked.
Remove from heat and let cool for a few minutes.
