Ingredients

  • 1 1/2 lbs ground beef
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1/4 cup gochujang (Korean chili paste)
  • 1/4 cup chopped scallions
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs, beaten
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil

Instructions

  • Preheat oven to 350°F. Line a loaf pan with parchment paper.
  • In a large bowl, mix together ground beef, panko breadcrumbs, milk, gochujang, scallions, garlic, salt, black pepper, and beaten eggs until well combined.
  • Transfer mixture to the prepared loaf pan and use your hands to shape it into a loaf.
  • In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, and sesame oil.
  • Pour the mixture over the top of the meatloaf, spreading it evenly with a brush or spoon.
  • Bake the meatloaf for 50-60 minutes, or until fully cooked and the internal temperature reaches 160°F.
  • Let the meatloaf rest for 5-10 minutes before slicing and serving. Enjoy!
