Preheat the oven to 450° Fahrenheit. Place your chicken thighs skin-side up in a prepared baking dish lined with parchment paper. Drizzle with olive oil and season with salt and black pepper. Cook until golden and crisp, about 35 minutes. The chicken should reach an internal temperature of 165 degrees Fahrenheit.
In a bowl whisk in sauce ingredients. Set aside.
Add a little bit of olive oil to a skillet and saute mushrooms until soft. Add in cooked chicken and pour in orange sauce. Cook until the sauce bubbles and thickens about 3 minutes. Garnish with scallions and serve immediately.
