Heat up a large wok on medium-high heat with olive oil.
Flavor your chicken with garlic salt, pepper, and a hint of red pepper flakes, to your liking. Place it into a preheated wok and cook until the chicken is thoroughly done.
While the chicken is cooking, make the sauce at the same time. Mix together all the sauce ingredients using a whisk and then set aside for later use.
Place the chicken on a plate and set it aside. Add extra olive oil if necessary, then fry the garlic and ginger until they release their aroma.
Add the red peppers, peas and broccoli. Fry for about 4-5 minutes, then add the mushrooms. Continue cooking for another two minutes.
Put the chicken back in the pan. Reduce the heat and add the sauce. Let it simmer gently for 5 minutes and then enjoy!
