Ingredients
  

  • 125g of rice
  • 5 dried tomatoes
  • 5 slices of coppa
  • 10 cherry tomatoes
  • ¼ cucumber
  • Arugula
  • Parmesan shavings

Instructions
 

  • Cook rice in boiling water (according to instructions on the packaging).
  • Cut the coppa, cherry tomatoes, cucumber and dried tomatoes into pieces.
  • Mix everything on a plate. Season and add a drizzle over olive oil.
  • You can add lightly crushed pistachios, it's delicious!
  • Enjoy your lunch!
