Salt and pepper the salmon, then fry with olive oil on high heat until it has a crispy surface.
Set aside on a platter. Fry leeks and pour in the cream and grated parmesan, whisk on medium heat.
Sprinkle with chopped chives and lemon zest. Stir, put the salmon in the sauce and let it simmer on low heat for about 8-10 minutes.
Serve with rice and a good salad.
