Sterlet in butter

Ingredients
  

  • 1 whole sterlet, gutted and scaled
  • Salt and pepper, to taste
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 2 tbsp lemon juice
  • Fresh parsley, chopped (optional)

Instructions
 

  • Set the oven’s temperature to 400°F (200°C).
  • Salt and pepper the inside of the fish.
  • Melt the butter in a frying pan over medium heat. Add the garlic and cook for about a minute, or until fragrant.
  • Add the garlic butter to the frying pan with the fish already inside.
  • Cook the fish in the oven for 15 to 20 minutes, or until the skin is crispy and the fish is thoroughly cooked.
  • Take the fish out of the oven and drizzle it with lemon juice.
  • If preferred, top the fish with more melted butter and chopped parsley before serving.
