  • 8 ounces whole wheat spaghetti
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can (14 ounces) diced tomatoes
  • 1/2 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 ounces mixed seafood (shrimp, scallops, mussels, etc.)
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Follow the package directions for cooking whole wheat spaghetti. Drain and set aside.
  • Warm the olive oil in a large skillet over medium heat. Sauté the chopped onion and garlic until fragrant and translucent.
  • Add the sliced red and yellow bell peppers to the skillet, and cook for a few minutes until slightly softened.
  • Pour in the diced tomatoes and vegetable broth. Stir in the dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  • Allow the sauce to simmer for about 10 minutes to let the flavors meld.
  • Add the mixed seafood to the skillet and cook until cooked through approximately 5-7 minutes. Be careful not to overcook the seafood.
  • Serve the seafood and tomato sauce over the cooked whole-wheat spaghetti.
  • Garnish with fresh chopped parsley.
