  • 4 salmon fillets
  • 8 ounces mushrooms, sliced
  • 2 cups fresh spinach leaves
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


  • Preheat the oven to 400°F (200°C).
  • Season the salmon fillets on both sides with salt and pepper.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the minced garlic and cook for 1 minute until fragrant.
  • Add the sliced mushrooms to the skillet and cook for 5 minutes until they become tender.
  • Stir in the spinach leaves and cook for an additional 2 minutes until wilted.
  • Turn off the heat and stir in the lemon juice.
  • Line a baking sheet with parchment paper and place the seasoned salmon fillets on it.
  • Spoon the mushroom and spinach dressing over the salmon fillets, dividing it evenly.
  • Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
