Mongolian Chicken Stir

Ingredients
  

  • 2 large chicken breasts
  • 1/2 cup cornflour
  • oil
  • 1 tbsp garlic powder
  • 1 heaped tsp Chinese five spice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp baking powder
  • 1 large onion
  • 1 tbsp fresh ginger
  • 1 tbsp fresh garlic
  • 2 tbsp brown sugar
  • soy sauce
  • 12 fook morris (dried red chillis)
  • 2 bell peppers
  • 1/2 cup apple juice

Instructions
 

  • Start off by tossing 2 large chicken breasts (thinly sliced) in 1/2 cup cornflour, 4 tbsp oil (preferably sesame oil), 1/4 cup soy sauce, 1 tbsp garlic powder, 1 heaped tsp Chinese five-spice, 1 tsp salt, 1 tsp black pepper and 1/2 tsp baking powder. Leave to sit for roughly 20 mins.
  • Heat a large wok/frying pan with 1/4 cup oil and stir in the chicken. It will stick together initially but use a spoon to break the pieces apart. Stir in 1 large onion (sliced), 1 tbsp fresh ginger, 1 tbsp fresh garlic, 2 tbsp brown sugar, 1/4 cup soy sauce, 12 fook morris (dried red chillis), and 2 bell peppers (thinly sliced). Add 1/2 cup apple juice and leave to simmer for 5 mins. Trust me it works.
  • Stir in your cooked noodles until all is combined. Use kitchen scissors to cut the noodles to the preferred length. This makes it easier to stir, serve and eat. Garnish with chopped spring onion and fresh red chillis. Enjoy.
