Lemon drizzle cake

Ingredients
  

  • 225g butter, melted slightly
  • 225g sugar
  • 4 eggs
  • 225g self-raising flour
  • Zested of 1 lemon

Drizzle Topping:

  • Juice of 1½ lemons
  • 85g sugar

Instructions
 

  • In a bowl, mix together the butter and sugar until fully combined.
  • Add in the remaining cake ingredients and mix until you get a thick batter. Spoon the mixture into a loaf tin lined with greaseproof paper and bake in a bowl, mix together the butter and sugar until fully combined.
  • Bake for 40-45 mins, or until risen and darkened slightly. once the cake is cooked, prick all over with a skewer or fork.
  • Make the drizzle topping by mixing together the sugar and lemon juice.
  • Pour over the warm cake and leave it to cool.
  • Cut into thick slices and enjoy!
