Italian salad Recipe

It’s summer, it’s very hot, so what could be better than a fresh recipe with the flavors of Italy?
Ingredients
- 125g of rice
- 5 dried tomatoes
- 5 slices of coppa
- 10 cherry tomatoes
- ¼ cucumber
- Arugula
- Parmesan shavings
Instructions
- Cook rice in boiling water (according to instructions on the packaging).
- Cut the coppa, cherry tomatoes, cucumber and dried tomatoes into pieces.
- Mix everything on a plate. Season and add a drizzle over olive oil.
- You can add lightly crushed pistachios, it’s delicious!
- Enjoy your lunch!
