It’s summer, it’s very hot, so what could be better than a fresh recipe with the flavors of Italy?

Ingredients

  • 125g of rice

  • 5 dried tomatoes

  • 5 slices of coppa

  • 10 cherry tomatoes

  • ┬╝ cucumber

  • Arugula

  • Parmesan shavings

Directions

  • Cook rice in boiling water (according to instructions on the packaging).
  • Cut the coppa, cherry tomatoes, cucumber and dried tomatoes into pieces.
  • Mix everything on a plate.┬áSeason and add a drizzle over olive oil.
  • You can add lightly crushed pistachios, it’s delicious!
