Green Peas and Mint Puree

A perfect balance of sweet green peas and the energizing scent of fresh mint can be found in this colorful dish. This puree is a great addition to your summer menu due to its reviving flavor and vivid green color.
Ingredients
- 2 cups English green peas
- 1/4 cup fresh mint leaves
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- Salt and pepper, to taste
Instructions
- Warm the olive oil in a large saucepan over medium heat. Sauté the chopped onion and minced garlic until softened and fragrant.
- To the saucepan, add the English green peas and vegetable broth. Bring the mixture to a boil, then reduce to low heat and continue to cook for 15 minutes, or until the peas are tender.
- Remove the saucepan from the heat and set aside to cool. The mixture should then be transferred to a blender or food processor. Blend in the fresh mint leaves until smooth.
- Season the puree with salt and pepper according to your taste preferences. You can adjust the consistency of the puree by adding more vegetable broth if desired.
- Transfer the green peas and mint puree to a serving dish and garnish with additional fresh mint leaves if desired. Serve warm.
