Green Peas and Mint Puree

Ingredients
  

  • 2 cups English green peas
  • 1/4 cup fresh mint leaves
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • Salt and pepper, to taste

Instructions
 

  • Warm the olive oil in a large saucepan over medium heat. Sauté the chopped onion and minced garlic until softened and fragrant.
  • To the saucepan, add the English green peas and vegetable broth. Bring the mixture to a boil, then reduce to low heat and continue to cook for 15 minutes, or until the peas are tender.
  • Remove the saucepan from the heat and set aside to cool. The mixture should then be transferred to a blender or food processor. Blend in the fresh mint leaves until smooth.
  • Season the puree with salt and pepper according to your taste preferences. You can adjust the consistency of the puree by adding more vegetable broth if desired.
  • Transfer the green peas and mint puree to a serving dish and garnish with additional fresh mint leaves if desired. Serve warm.
