½cup unsalted butter, cold and cubed
¼cup powdered sugar
Pinch of salt
2-3tablespoons ice water
For the Filling:
3large oranges, zested and juiced
1cup granulated sugar
4eggs
½cup Greek yogurt
¼cup olive oil
2tablespoons cornstarch
Instructions
Combine the flour, powdered sugar, and salt in a mixing bowl. Cut in the butter until the mixture resembles coarse crumbs. Mix in the ice water gradually until the dough comes together. Shape into a disc, wrap in plastic, and chill for 30 minutes.
Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface and line a pie dish. Trim any excess and crimp the edges.
In a bowl, whisk eggs and sugar until pale. Add orange zest, juice, yogurt, olive oil, and cornstarch. Whisk until smooth.
