I have a confession to make: these Courgette and Halloumi burgers might just be the best vegetarian burger recipe I’ve ever come across. Seriously, the combination of the tender courgette mixed with the salty, halloumi cheese is an absolute game-changer.
I swear, with each bite, it’s like a symphony of taste in your mouth. These burgers are so good, they might just make you forget about meat altogether. Trust me, I’m head over heels for these Courgette and Halloumi burgers, and I could go on and on about how utterly delicious they are.
Courgette (Zucchini) – Medium-sized courgettes without any soft spots or blemishes. If you don’t have courgettes on hand, you can use grated cucumber as a substitute. Just make sure to squeeze out excess moisture before adding it to the mixture.
Carrot – One medium-sized carrot should suffice. Sweet potatoes can be a great substitute for carrots.
Halloumi Cheese – 1 standard block of halloumi, usually around 200-250g (7-9 oz). For a vegan option, try using firm tofu or grated vegan cheese. The texture and flavor will be slightly different but equally delicious.
Eggs – 2 eggs are needed to bind the ingredients together.
Breadcrumbs or Flour – About 1 cup of breadcrumbs or flour should be enough.
Fresh Herbs (Mint, Coriander, Basil) – A handful of each herb, roughly chopped, will do the trick. Feel free to mix and match with your favorite herbs. Parsley, dill, or oregano are great options.
Pink Salt and Pepper – Pink Himalayan salt adds a subtle flavor, but regular salt works just fine.
Grate the courgette and peel and grate the carrot. Place them in a large strainer, sprinkle with salt, and let them sit to draw out excess water.
Grate the halloumi cheese and chop the fresh herbs.
In a mixing bowl, whisk together the eggs. Add in the grated courgette, carrot, halloumi, fresh herbs, and salt and pepper. Mix until well combined.
Toss in the flour or breadcrumbs to bind the mixture together. Feel free to add any additional flavors or seasonings at this stage.
Form the mixture into patties and place them in the fridge, uncovered, for at least 30 minutes. This helps firm up the burgers for frying.
In a frying pan, heat olive oil over medium heat. Cook the patties for about 4-5 minutes per side, or until golden brown and crispy.
