Courgette And Halloumi Burgers Ingredients

Carrot – One medium-sized carrot should suffice. Sweet potatoes can be a great substitute for carrots.

How To Make

Grate the courgette and peel and grate the carrot. Place them in a large strainer, sprinkle with salt, and let them sit to draw out excess water.

Grate the halloumi cheese and chop the fresh herbs.

In a mixing bowl, whisk together the eggs. Add in the grated courgette, carrot, halloumi, fresh herbs, and salt and pepper. Mix until well combined.

Toss in the flour or breadcrumbs to bind the mixture together. Feel free to add any additional flavors or seasonings at this stage.

Form the mixture into patties and place them in the fridge, uncovered, for at least 30 minutes. This helps firm up the burgers for frying.

In a frying pan, heat olive oil over medium heat. Cook the patties for about 4-5 minutes per side, or until golden brown and crispy.

  • Grate the halloumi, chop the fresh herbs, and mix the two eggs.
  • You need to extract as much liquid from the courgette and carrot as possible! I just squeezed the excess water out with my hands; if you want, you can push against it with a kitchen towel.
  • Then, combine all of the ingredients and toss in the flour/breadcrumbs. You can add any other flavors you like!
  • Leave the patties in the fridge (uncovered) for at least 30 minutes before cooking. This will draw out some of the water and firm them up for frying. I pan cooked them in olive oil for around 10 minutes. Serve with whatever you like!
