Chicken Schezwan/Szechuan

Ingredients
  

  • 500g chicken breast
  • 5 tbsp cornflour
  • Red chilli powder
  • 1 tbsp soya sauce
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup ketchup
  • 1 1/4 cup water
  • 5 tbsp soya sauce
  • 1 tbsp vinegar
  • 1-2 tbsp red chilli sauce(optional)
  • 1/2 tsp white pepper powder
  • 1 tbsp sugar
  • 4 tbsp oil
  • 6 cloves garlic minced/very finely chopped
  • 1/4-1/2 tsp dry red chilli flakes
  • 1 large capsicum large pieces/strips
  • 1 large carrot large pieces/strips
  • 1 large white onion large pieces/strips
  • Green onion chopped- whites and greens separated.
  • 1 tbsp cornflour mixed with 1/4 cup water

Instructions
 

  • In a bowl, mix all these ingredients and coat chicken well. Heat oil and deep fry the chicken pieces just until lightly golden.
  • Remove and keep aside.
  • In a bowl, mix all sauce ingredients and set aside.
  • Heat oil, add in garlic, chilli flakes, green onion whites and fry on low for 1–2 minutes. Add in the sauce, mix well and let bubble for 2 minutes.
  • Add in the fried chicken along with the vegetables. Mix well until everything is coated well with the sauce. Add the cornflour slurry. Let cook for 8-10 minutes until vegetables are a bit softened. Adjust the gravy consistency by adding more water if required. Add salt if required.
  • Do coal smoke for street style desi Chinese flavour. Garnish with chopped green onion and serve with fried rice.
