Ingredients

  • 150g bulgur or couscous
  • 50g raisins
  • 10g mint
  • 10g parsley or coriander
  • 2 spring onions
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 50g green olives, sliced
  • 100g feta
  • 30g almond flakes, roasted

Instructions

  • Bring the bulgur to a boil in a pot with 1 liter of water.
  • Cook for about 15 minutes. Meanwhile, soak the raisins for 15 minutes in lukewarm water.
  • Roast the almonds.
  • Add the bulgur to a bowl together with the chopped parsley, mint, olives, spring onions, feta, almonds, lemon juice, olive oil, salt and pepper.
