Brussels sprout tarte flambé

  • 200g spelt flour
  • 120ml water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 100g Creme Fraîche
  • 1 tbsp olive oil
  • 250g brussel sprouts
  • 1 red onion
  • 1 apple
  • 100g feta cheese
  • pumpkin seeds
  • salt & pepper


  • Gradually add water to flour, oil and salt in a bowl. Mix and knead into a smooth dough. Refrigerate for 30 min.
  • Remove the outer leaves of the brussels sprouts. Halve the remaining brussels sprouts and wash them. Wash, core and thinly slice the apple. Peel the onion and cut into rings.
  • Sprinkle the work surface with flour and thinly roll out the dough. Place the dough on a lined baking tray and spread the creme fraîche. Season with salt and pepper. Top with apple, onion and brussel sprouts. Sprinkle with olive oil and bake in the preheated oven at 210° C top and bottom heat for 15 min until lightly golden.
  • After baking sprinkle flatbread with feta and pumpkin seeds. Season with salt & pepper. Enjoy!
